With supermarket prices on the rise, there’s no better time to make the most of your leftover food to whip up some simple yet tasty meals for you and your family to enjoy.

Making your own pizza from leftover rice might seem a little too far-fetched on paper, but once you get started and taste it yourself, you’ll want to cook more rice than you need for a long time to come.

Ingredients

  • Leftover rice
  • 2tsp cornstarch
  • Cheese
  • Oil
  • Leftover veggies (optional)

Method

  1. Start by popping your leftover rice into a mixing bowl, then add two teaspoons of cornstarch. If you have a lot of leftover rice, gradually add more cornstarch until you have the correct moulding consistency.
  2. Use a spatula to combine the cornstarch with the rice.
  3. Next, lay out clingfilm over a chopping board and some of your mixture on top.
  4. Now place a second strip of clingfilm over the mixture and use a rolling pin to flatten it out.
  5. Lift away the top layer of clingfilm and place a bowl over the flattened mixture to create a circular shape, then trim off the excess mixture and put it back in your mixing bowl.
  6. Repeat steps 3-5 with the rest of your mixture.
  7. With your bases formed, pop them all in the freezer for 15-20 minutes.
  8. Now, prepare your frying station by adding oil to a deep frying pan and set it to boil.
  9. Fry each base, one at a time, in your frying pan until they’re crisp and golden.
  10. Use kitchen roll paper to pat down each base and soak up the excess oil.
  11. Your base is now ready for toppings. You can use whatever sauce you like, but if you want to stay classic, we recommend using either pizza sauce or leftover pasta sauce if you have any waiting to be used. Spread your chosen sauce over each base with the back of a spoon, then sprinkle on some cheese. If you’ve got any leftover veggies about to turn bad, this is the perfect opportunity to add some extra flavour and save it from the food bin. You can also add some herbs and spices for an extra kick.
  12. Now place two of your mini pizzas in the microwave until the cheese has melted, and there you have it. Enjoy!

A quick and easy recipe that can turn your cold leftover rice into a truly tasty snack.

Ingredients

  • 400g leftover rice
  • 60ml water
  • 1tbsp butter

Method

  1. Start by adding your 400g of leftover rice into a blender, then pour in 60ml of water and blend. If you have more rice, gradually add more water to your blender to reach a mouldable consistency. Simply use less water if you have less rice.
  2. Now take out a handful of the mixture, roll it up into little balls and place them on a frying pan.
  3. Add a tablespoon of butter to the frying pan and fry until each little ball is gold and crispy.
  4. Once that’s done, place them into a serving bowl with your favourite sweet or savoury sauce. Enjoy!

This is probably one of the easiest ways to upcycle your stale bread or leftovers, making for a highly tasty and welcome appearance in your next salad bowl.

Ingredients

  • Leftover/stale bread
  • Garlic seasoning
  • Olive oil
  • Parmesan cheese
  • Melted butter

Method

  1. Start by cutting your bread into small cubes and place them all in a mixing bowl.
  2. Sprinkle olive oil over your bread cubes and give the bowl a shake.
  3. Next, simply season them to your preference - we recommend using garlic seasoning, but you can add a different seasoning if you’d prefer.
  4. Grate parmesan cheese over your bread cubes.
  5. Pour melted butter over the bread cubes and turn the bread cubes over so they’re all saturated with your seasonings.
  6. Prepare a baking tray with greaseproof paper, then pour your seasoned bread cubes onto it and spread them out.
  7. Now, bake them for 10 minutes in the oven at 180°C, so they’re nice and crispy. Enjoy!

Here’s another simple recipe that’ll have you wishing you had more leftover bread.

Ingredients

  • 5 slices of leftover bread
  • 4tbsp sugar
  • 1tbsp cinnamon powder
  • 1tbsp butter
  • 60ml milk

Method

  1. Start by cutting your leftover bread into small bite-sized cubes.
  2. Pour your bread cubes into a frying pan and set the heat to low.
  3. Stir the cubes with a spatula and toast them for 5-10 minutes until they’re crispy.
  4. Pour the toasted cubes into a bowl and put them aside for a moment.
  5. Now, pour 1tbsp cinnamon powder and 4 tbsp sugar into a small mixing bowl, then whisk it together until there are no more lumps.
  6. With your cinnamon sugar made, pour it into a frying pan and cook it at a low heat until it becomes a dark golden colour.
  7. Add 1tbsp butter to your melted sugar and mix well.
  8. Gradually add 60ml milk to the mix and keep mixing while you do.
  9. Let the mixture brew until the mixture turns thick and frothy.
  10. Now, add your toasted bread bites, then mix them up in your syrup for 2 minutes.
  11. Pour your glazed bread bites onto a tray to cool, then enjoy!

Method

  1. Slice up fruits into wedges.
  2. Place them into sandwich bags and pop them in the freezer for at least 12 hours.
  3. Add a wedge or two to your favourite cocktail or glass of water.

Method

  1. Use a glass to cut out small circles of bread.
  2. Sprinkle cheese into the centre of each piece of bread.

  5. Place them onto a baking tray with greaseproof paper and bake them for 5-10 minutes until they’re golden.
